When we started the Florida Beef on Weck project, we thought it would be easy. Go to a place, eat a sandwich, then say if it was good or not.
Turns out, it's not that easy. One sandwich has great meat but a weak bun. Another had a weird bun, no horseradish, but amazing roast beef. In order to have a uniform review, we realized we needed a uniform method to judge.
We decided to break down the elements
that go into the perfect Roast Beef on weck
sandwich and assign a point value for each.
Beef:
Medium rare to medium well and tender 3 points
Well Done and tender 2 points
No grizzle or fat 1 point
Nasty 0 points
Add 1 point for well seasoned beef Subtract 1 point if the meat is cold
Roll: Balanced salt and caraway seeds that stay on the roll Add 1 point
Roll is warm or toasted Add 1 point
Top of roll is lightly dipped in Au Jus Add 1 point
Au Jus: Made from scratch and well flavored Add 1 point
Horseradish: Fresh, well colored and in proper quantity Add 1 point
Pickle: Pickle spear Add 1 point
This makes the perfect BOW have a score of 10 points. 4 for the beef, 3 for the roll, 1 for the Au Jus, and one each for horseradish and pickle.
